Immune-boosting, skin-glowing winter citrus kale salad.

This salad is easy to make with minimal prep. It’s packed with antioxidants like vitamin C and beta-carotene to boost your immune system during these winter months, fiber, protein, and healthy fats.

Ingredients

1 small bunch of organic kale, washed and torn into bite-size pieces

1 piece of citrus, peeled and sliced (orange, clementine, grapefruit)

1-2 beets, cooked and sliced (jarred is fine)

1/2 avocado, diced

1/2 cup cooked quinoa

1/4 cup sunflower seeds, toasted lightly

2 tbsp avocado or olive oil

1 tbsp balsamic vinegar

salt and pepper to taste

Directions

Massage kale with oil and vinegar to make sure all pieces are coated.* Add quinoa and toss to combine. Then add avocado, beets, and citrus of choice. Top with toasted sunflower seeds (I like to toast them on the stove before adding, it’s an extra step but worth it). Season with salt and pepper to taste. Bonus points if you enjoy it with a cup of warm ginger honey tea.

*This is actually the most important step, kale is tough to eat raw (for me anyway) unless you really work it so it softens. Most time consuming part, but if you want to do a bunch at once it will keep a few days in the refrigerator.
