Pumpkin waffles.

Recipe.

1 cup plain whole milk Greek yogurt

1 cup pumpkin puree

1/2 cup milk or water (may need more to thin)

splash of vanilla

2 cups whole wheat flour

2 tsp baking powder

2 Tbsp ground flax seed

pinch of salt

shake of cinnamon (+/- nutmeg +/- ginger)

1 cup chopped walnuts

Mix wet, add dry and stir to combine. Fold in walnuts. Cook in greased waffle maker. Top with butter and maple syrup.
