Easy homemade donuts.

We have big donut fans over here, so like most things I decided to create a healthier homemade option. This recipe is easy, the hardest part is getting the batter into the pan without covering the middle. The do contain some sugar, we are making donuts after all, but they are baked not fried and arguably better for you than store-bought versions. They have a delicious, cake-like texture. If you don’t have a donut pan, you can use this recipe in a muffin tin or loaf pan, but bake time will need to be adjusted.

Sometimes I top them with regular frosting and sprinkles, sometimes they get hemp heart “sprinkles” and sometimes I mix a dollop of Greek yogurt with a spoonful of peanut butter and a drizzle of honey and call it frosting:)

Recipe (makes 12 donuts)

4Tbsp melted butter

1/4 c avocado oil

1/3 c white sugar

1/3 c brown sugar

1tsp vanilla

2 eggs

1tsp baking powder

1/4 tsp baking soda

dash of nutmeg and pinch of salt

1c whole milk

2 2/3 c flour

Preheat oven to 375F and grease pan. Beat butter, oil, and sugar in mixer with paddle attachment. Add eggs and vanilla and mix. Then add baking powder, soda, nutmeg and salt. Finally stir in milk and flour, alternating a little milk then flour until it is all incorporated. Pour into pan and bake 10-12 min. Let cool on wire rack. Top with frosting and sprinkles as desired.
